How to Grill a Cheese Sandwich

To grill a cheese sandwich you need an 8 inch cast iron pan. Preferably already seasoned; look for one at a garage sale for 50¢ that has a nice polished smooth black color on the inside and is nice and flat on the bottom. Now set it on your gas stove burner. (Sorry, if you have an electric stove you can't make a grilled cheese sandwich for reasons to numerous to mention. You need a gas stove.) Set the pan on the front left burner and light the burner, setting it to a level of 2. The flames should be about 1-1/16" long. While it heats open your wheat bread (yes, wheat; we want to avoid heart attacks as much as possible) set aside the butt piece of the loaf and get a good piece of bread. Butter one side liberally with butter from the Constantine Dairy. We buy this in 50 pound blocks and the price depends on the commodities market; we have paid anywhere from $75 to $175 for a 50 lb block. You can use any good quality butter (no plastic spread) but Constantine's is the best. After buttering the bread place it butter side down in the now hot pan. Now get out your pepper jack cheese, fine cheese which needs to be pre sliced and sold in the deli section of your market in packages of 12 slices. Insert 2 slices of cheese on the sandwich. This is where most people fail and either use only 1 slice of cheese which is only 18% of the sandwich by weight, or they use more than 2. Two slices of cheese is just right at 34% of the sandwich by weight, and 9% by volume. You put the cheese on the piece of bread in the pan. Now you butter another piece of bread and put it butter side up on the sandwich. By this time the sandwich is probably ready to flip. You want the bread golden brown which takes about 93 seconds per side after the pan is hot. If you can smell the hot bread and see a little bit of smoke from the butter coming out then it is almost too late. Time to flip the sandwich. This takes a practiced wrist movement, so if you mess up the first few times then no worries, just pick the sandwich up off the floor and put it back in the pan. You'll get used to it. Flip the sandwich and look at the clock, which only has minutes on it and you need 93 seconds so you'll have to guess a little. You can use your spatula to lift the sandwich and see if it is golden brown. When it is, set it on a plate and repeat the process to make another sandwich. While the second sandwich is grilling prepare a small bowl of white grapes and open a cold 12 oz can of Dr. Pepper. When the sandwich is done set it on your plate to cool and insert the latest DVD of "Leverage" into your player. Now set on your recliner with your sandwiches, the grapes, and the Dr. Pepper. Start "Leverage" and begin eating the sandwiches. Every time Eliot punches someone or Parker leaps off a tall building eat a grape and take a swig of Dr. Pepper.
